Najlepszy Pasztet z soczewicy/ The Best Meatless "Meatloaf" (PL/EN)

(PL) Ten przepyszny pasztet jest z portalu Jadlonomia.com, robiłam już kilka jego wersji, dzisiejsza to ta z żurawiną, ale bez żurawiny (niestety się skończyła). A link do przepisu poniżej, naprawdę polecam!








(EN) This is the most delicious Meatless "Meatloaf" or Veggie Loaf, absolutely tasty and rich in great flavours! Kids approved! The recipe is form fantatsic polish blog www.jadlonomia.com, the link to the recipe is below:


I am hoping the owner of the blog will soon add English language, so I can just copy and paste links to her recipes so you can try more of them as they are really intresting!

Here is my translation of the recipe, I hope you enjoy it as much as me!

Ingredients (for 20cm x 11cm baking tin)

2 cups cooked green lentils
1 cup cooked millet
100ml of grapeseed oil
2 onions
4 tbs dried cranberries (I missed that step I ran out of cranberries :(
2-3 tbs soy sauce
2 bay leaves
2 cloves
2/4 tbs marjoram
a pinch of nutmeg
salt, pepper
1 tbs of coconut oil for frying

Preparation:

Preheat the oven to 180C. Precook lentils and millet - as per packaging instruction.
Chop onions, heat the oil in a pan, add onions, bay leaves, cloves. I added some soy sauce and covered it with a lid, cook on low heat, add bit of water if necessary. . When the onions are golden, remove bay leaves and cloves. This will leave really nice strong flavour. Place onion, millet, lentils, oil, soy sauce, all the rest spices in a blender and blend until smooth. Taste it and check if needs more salt. This will be already super delicious! Now you can use it as spread! But we are onto baked loaf so..follow these steps now. If you want, now add the cranberies and stir in with a spoon. Line the baking tin with a baking paper, place the mixture in the tin. Bake for 40-45min (top should be golden). Then let it cool in the tin, preferably overnight but this won't happen at my house! I served it with potatoes and peas. Bon Apetit!

Pudding Wanilliowy z Kaszy Jaglanej/ Vanilla Millet Pudding (PL/EN)

(PL) Niedawno znalazłam taki oto przepis na pyszny deser z kaszy jaglanej, taki prosty dwuskladnikowy i naprawdę smaczny! Przepis jest ze  świetnej strony Veganbanda.pl:


Potrzebujesz:
1 szklanki kaszy jaglanej
4 szklanek mleka roslinnego o smaku waniliowym, np. mleko ryżowe waniliowe 
(tym razem kupiłam gotowe, jednak nie ma problemu można zrobić swoje o intensywnym smaku wanilli, a jak zrobić mleko roślinne już kiedyś pisałam:

Metoda jest prosta gotuje się kasza w mleku nie w wodzie, gotowanie trwa ok 20min. 1 szklanka kaszy na 4 szklanki mleka roślinnego. Po ugotowaniu, blendujesz, można posypacć kakao na górę i gotowe. Nam smakował tak na świeżo na ciepło, po przechowaniu w lodówce zrobił się zbyt suchy, więc jak dla nas świeże najlepsze.

(EN) Recently I discovered a great recipe for a simple dessert made from millet, just two ingredients and is delicious!  I found it on  Polish Vegan Blog www.veganbanda.pl


You will need:
1 cup of millet uncooked
4 cups of Vanilla Flavoured Plant milk, e.g Vanilla rice milk  or Vanilla Soy Milk

(I used the store bought milk, but you can also make it with homemade vanilla flavoured milk, and here is how to make plant milk:

Method:
You cook millet in a pot in milk not in the water, just put 1 cup of millet and 4 cups of vanilla plant milk and cook it for circa 20mins. After it is cooked, blend it well in a high speed. And it is ready! Pour it into jars or bowls, you can dust some raw cacao powder on the top and enjoy! We loved it straight away when it was still warm. You can refrigerate but for us it went a bit too dry when we left it in the fridge. We prefer it fresh!

Domowej roboty Orkiszowa Tortilla/ Homemade Spelt Tortillas PL/EN

(PL) Krótki post jak zrobić tortilla, które świetnie zastępują chleb, można zrobić z nich przepyszne kanapki i wrapy do domu lub na podróż, są szybkie i na prawdę łatwe. Zajęło mi troszkę żeby w końcu ogarnąć taki przepis na wrapy, żeby nie były chrupiące a miękkie (po aby zawinąć w nie warzywa i sos) i w końcu szwagier mnie uświadomił że sekret tkwi w użyciu gorącej wody, a nie zimnej jak ja to robiłam oraz po ugotowaniu należy je ułożyć na mokrym ręczniku (po to żeby zmiękły) pod przykrywką.

Składniki na ok 10 tortilli:
2 szklanki mąki orkiszowej
150ml szklanki gorącej wody
sól
1 łyżeczka oleju kokosowego, lub oliwy z oliwek

Połączyć mąkę z wodą i solą potem dodać olej. Wyrabiać ciasto kilka minut, rozpruszyć mąkę na blacie podzielić ciasto na ok 10 równych części. Każdą część ugnieść w kulkę, którą należy rozwałkować równo na tortille.

Piec na bardzo ciepłej patelni bez oleju, ok 30 sek  - 1 min każda strona. Przechować na talerzu, lub w garnku na mokrej szmatce, pod przykrywką.




Do wypełnienia tortilli użyłam domowej roboty hummusu (dip z ciecierzycy, tahini, czosnku, cytryny, musztardy), pieczone warzywa (ciecierzyca, kalafior, czerwona kapusta, grzyby etc)  i rukola.

A tu inne przykłady zastosowania tortilli z kilku ostatnich tygodni:

Hummus ze słodkiego ziemniaka, grzybki duszone z czosnkiem i szpinakiem w postaci kanapki - Quesadilla. Wrap po dodaniu wypełnienia i  złożeniu był podgrzany chwilkę w grillu elektrycznym!
Hummus ze słodkiego ziemniaka to po prostu upieczony słodki ziemniak, zmiksowany na puree i przyprawiony. Dzieciom bardzo smakowało ku naszemu zdziwieniu, bo coś takiego robiłam po raz pierwszy.



Tutaj Quesadilla z hummusem z ciecierzycy i suszonych pomidorów, z rukolą i grzybami.



A tutaj w formie kanapki i wrapa z hummusem tradycyjnym i warzywami (rukola, kiełki, papryka, grzyby, ogórki).

(EN) Just a short instruction how I make tortilla wraps. They are great bread substitute, you can make delicious sandwiches or wraps to eat at home or on the go. I think they are easy to make. It took me a while to finally get the right recipe, so they are soft enough to be abe to wrap things in it, not as I did at the beginning they were too crispy to use them as a wrap (but they were perfect as flat bread). My borther-in-law finally gave me a good tip to use hot water instead of cold one and another tip is to use store them on a pot on a layer of dump towel and cover with the lid.

Ingredients for approx 10 tortillas:
2 cups of spelt flour
150ml very warm water
salt
1 tsp coconut oil or olive oil

Mix flour, salt and water, then add some oil. Knead the dough for few minutes, dust the table woth som eflour, split the dough into approx. 10 parts. Every part shape into a ball, which you have to roll into a flat tortilla. Here is video that might help:

Cook in a pan, with no oil, circa 30sec - 1min each side. Store on a plate or in a wide pot, on a layer of  dump towel, cover with the lid.




For the filling above I used homemade hummus (dip made from chickpeas, tahini, garlic, lemon and mustard), roasted veggies (chikpeas, couliflower, red cabbage, mushrooms etc) and fresh rukola.

And here some other uses of tortillas I had in last few weeks:

No cheese Quesadillas: Sweet potato hummus (just bake sweet potatoes and mash it and season), served with stewed mushrooms with garlic and spinach. I filled half of the tortilla and grilled it, so it made a cool no cheese Quesadilla. Kids really loved it, we were pleasantly surprised and this is the first time I ever done anything like it!



Here another sandwich type/ No cheese Quesadilla, with Sundried Tomato Hummus with rucola and mushrooms. I just made traditional hummus and blended with few sundried tomatoes! It was a hit!




Here, tortilla is used as a flat bread and a wrap, I spread some hummus and veggies (rucola, sprouts, peppers, mushrooms, gherkins).
