Domowej roboty mleko orzechowe/ Homemade nut milk

Mleko roślinne robię w domu coraz częściej, zdarza mi się też kupować gotowe w sklepie (ale to głównie na wyjazdach), jest proste w wykonaniu i samo wykonanie trawa kilka minut. A warto robić w domu, bo smak ma nieziemski no i wiemy dokładnie co w nim jest.  Aczkolwiek można znaleźć w sklepach ze zdrową żywnością dobrej jakości mleka roślinne i bez śmieci, ale swojej roboty jest zdecydowanie smaczniejsze. Dzisiaj zaprezentuję "mleko" (choć nazwa mylna bardziej powiedziałabym napój) z orzechów laskowych. Do tej pory robiłam takie napoje z orzechów nerkowca, migdałów, nasion konopii, wiórków kokosowych i ryżu. I to mleko ryżowe smakowało najgorzej, tzn smaku nie miało, mimo że dodałam kilka umilaczy smaku (daktyle i ziarna wanilli). Ale wszystkie orzechy i nasiona konopii się bardzo do tego nadają, napój z wórków kokosowych tez był smaczny. Ale moimi faworytami są migdały, orzechy laskowe i nasiona konopii (wtedy uzywam całych nasion nie łuskane). Technika wykonania w każdym przypadku jest identyczna, można pić od razu lub dodać jak wspomniałam wyżej np. 2 daktyle i ew. kilka ziaren wanilli. 
Jako produkt uboczny z każdej produkcji tego napoju dostaniesz garść zmielonych orzechów lub innych ziaren, w zależności z czego robisz, które możesz użyć albo do wypieku ciastek (jako mąka - należy wysuszyć) albo jako posypka do owsianki lub sama w sobie jako surowa "owsianka" tak jak ja to zrobiłam, tylko zalać mlekiem roślinnym dodać owoce i jest śniadanie gotowe.  

I make plant milk more often now at home, although I do buy it when Im travelling, it is really simple to make and the work itself takes only few minutes. It is so worth it to make it at home, as the taste is just so rich and we know exactly what is in it. Although you can find it healthy food shops a good quality plant milks without "e-xtra ingredients", but homemade is defniately the tastier. Today I will present how I made hazelnut "milk" (although I would call it drink rather than milk).  So far I made plant drinks from: cashewnuts, almonds, hemp seeds, shredded coconut and rice. The rice milk had the worst taste, or no taste at all, despite I did put some dates in and vanilla beans. But all the rest, so nuts, hemo seeds and shredded coconut milk worked really well everytime. My favourite is hazelnut, almond and hemp seed "milk" (for hemp seed milk I used whole seeds, not hulled). The technique is simple either way and the same, you can drink it straight or add some dates or vanilla beans if you wish.
As a byproduct you will get a handful of nut pulp (rest of blended wet nuts or whatever you use), you can use it as a flour to make cookies (first dry it) or sprinkle on your oatmeal, or just eat it as a raw nut "porridge" - just pour some of your milk on it and add some fruits and your breakfast is ready.


Potrzebujemy:
- ok 170 g (szklanka) orzechów lub innych, ja tutaj użyłam orzechów laskowych.
- 3 lub 3,5 szklanki wody
- 2 daktyle (i ewentualnie ziarenka wanilli ale ja robiłam bez)
- dodatkowo dobry blender
- szmatkę bawełnianą do wyciskania mleczka, ja użyłam pieluszkę tetrową (kiedyś wyciskałam w niej sery jak robiłam w domu), są też dostępne takie gotowe worki do wyciskania sera/ mleka, ale taka pieluszka tetrowa jest idealna
- duża szmatka i duże najlepiej metalowe sitko 

You will need:
- around 170g of nuts, I used hazelnuts (1 cup)
- 3 - 3,5 cups of water
- 2-3 dates for sweetness (and also you can add some vanilla beans, although I didn't)
- good blender
- a cooton cloth to press the milk, I used muslim cloth ( I used to use it to make cottage cheese at home), you can also buy a special cotton bag thatdoes the same job, although muslim cloth is perfect.
- big bowl and big preferably metal strainer

Wykonanie/ Method

1) Orzechy płuczemy najpierw, później zalewamy całkowicie woda i zostawiamy najlepiej na noc albo  na 6-8 godzin. Ja namaczam w 1 szklance zimnej wody. 

1) First you wash the nuts, then you soak them in water and leave it over night or 6-8 hours. I soak it in  1 cup of cold water. 



2) Po nocy lub 6-8 godzinach, orzechy zrobiły się miękkie, więc łatwiejsze dla blendera to zmielenia i teraz wrzucamy orzechy do blendera, dodając wodę, w której się moczyły, dodatkowo dolej 2 - 2,5 szkl. wody, aby w sumie było 1 szklanka orzechów i troszkę ponad 3 szklanki wody. Możesz użyć mniej lub więcej wody to zależy od Ciebie. Dodaj teraz daktyle jeśli chcesz również wanillie i blenduj ok minute zależy od mocy blendera. Poniżej zdjęcie już całkowicie zblendowanego mleka. 

2)  After the night or few hours of soaking, the nuts will be softer so easier to blend, throw them into your blender, adding the water they been soaking in, add more water, around 2 -2,5 cups, so in total you would have 1 cup of nuts and 3-3,5 cups of water. You can add less or more water, its up to you. Now add some dates or vanilla beans if you want and blend for a minute or so.

3) Teraz weź dużą miskę i pieluchę tetrową,  ustaw sitko na misce a na to tkaninę, gdy masz woreczek do mleka to sitko nie potrzebne. Teraz przelej  całą zawartość blendera na tkaninę, która leży na sitku, powoli mleko będzie przechodzić do miski a nasze resztki orzecha zostaną na tkaninie na sitku. 

4) Now take a large bowl, the muslim cloth and put your strainer on top of the bowl and then layer the muslim cloths, if you are using nut milk bag then the strainer isn't needed.  Now pour all your milk from the blender on the muslim cloth that sits on the strainer and your plant drink will be dripping into the bowl, leaving your nut pulp on the strainer.









5) Z takiej proporcji wyszło 700ml napoju i duża garść  zmielonych orzechów, które wykorzystałam jako surowa owsianka.
5) From that amount of water and nuts, I got 700ml of milk and big handful of nut pulp, that I used to make raw nut "porridge".
